Lahksa (Malaysian Coconut Soup)

INGREDIENTS
(makes 2 big bowls and some left over for the next day)
3/4lb (400kg) Turkey breast
1" of grated or finely chopped Lemon Grass
A bunch of fresh Coriander
Palm Sugar (or light brown sugar)
2 tablespoons of Santen (coconut powder)
1/2 pint water (or homemade stock from a chicken carcass)
Small handful of beanshoots
8 raw tiger prawns
Dried chinese mushrooms (soaked)
2 whole bullet chilli
Drizzle of sesame oil
10 stringless french beans
Thai Fish sauce
Potato starch
Sliced onion
Sliced sweet pepper (red or yellow)
Noodles*

Boil the water, grated lemon grass and the Santen powder. Slice the turkey meat into bite-sized strips and put it in the stock add the bullet chillis whole. Taste during cooking then you can judge when to remove them, if at all. Add the mushrooms and the french beans.

In a dry heavy skillet roast the sliced onion, garlic and pepper. Let them brown nicely with a pinch of salt and sugar. When they soften moisten them with a little vegetable oil to stop them sticking and burning.

Soak or boil the noodles according to the type. (do not boil them in the soup).

When the turkey strips look about cooked add the beanshoots and grill the prawns. Add the fish sauce and sugar to taste. I like to thicken the soup just a little with potato starch. Be careful not to make it too thick.

Now assemble. Put the drained noodles in the bottom of the warmed bowls add the onions, peppers and garlic. Spoon over the soup, if you left the chillis in make sure you share them equally. Warn any chilli virgins about them :) Drizzle some sesame oil in. Spend some money and get pure sesame oil for this - it's worth it. Drop the prawns on top. I leave the heads and skins on. You might want to remove them and de-vein the prawns for the squeamish. Dump on a large handful of roughly chopped coriander leaves.

To season the soup if you can't find fresh lemon grass and coriander, use Bart's Green Thai curry paste. It's just the raw minced chilli, garlic, coriander and Lemon Grass and it works well.

Serve with beanshoot and peanut salad and cucumber and chilli salad.

Rice thread noodles, white flat noodles or egg noodles all work fine in this recipe.
